Ingredients:
3 Eggs
1 handful spinach; chopped
1 green onion; diced
2 mini bell peppers; diced
3-4 cherry tomatoes; quartered
3 Tbsp cheese
salt and pepper; to taste
½ avocado; sliced
Directions:
1. Whisk eggs until frothy.
2. Cook eggs in a lightly buttered pan over medium-low heat until just starting to set.
3. Add remaining ingredients, except for avocado. Continue to stir and cook until eggs are completely cooked and veggetables are just starting to get soft. Reduce temperature if eggs are cooking too quickly.
4. Place eggs on a plate and garnish with avocado slices.
