Peach Bacon Salad

Ingredients:

1/3 C freshly squeezed lemon juice
1 tsp finely minced lemon zest
¼ C extra virgin olive oil
pinch salt and pepper to season
2 TBSP honey
chicken breasts
Romaine lettuce
Peaches
bacon; crisply cooked and chopped
Spinach
Toasted sugar almonds
White Cheddar; shredded

Directions:

  1. Whisk together all of the ingredients for the vinaigrette (first 5 ingredients) or shake together well in a covered mason jar.
  2. Take 1/2 the vinaigrette and pour over chicken breasts.  Let marinate for 15 minutes. Grill chicken.
  3. Assemble the rest of the salad ingredients, with the grilled chicken.  Pour dressing over and toss. Serve immediately.
