1- Zest and juice both lemons.
1- In a zip lock bag, place chicken,half of the lemon juice, a few swigs olive oil, and vinegar. Squish to combine and let marinate for 15-30 minutes.
2- Slice zucchini in half lengthwise. Brush with olive oil, then sprinkle with salt and pepper.
3-Start heating a large pot of salted water to cook the noodles in. Preheat the grill.
4- In a large skillet, place 1/4 c of olive oil. Add minced garlic. Heat on low while preparing remaining food, stirring occasionally.
5-Grill the chicken and zucchini. Add noodles to boiling water. When chicken and zucchini are finished, cut them into chunks. Save 1/2 c of pasta water.
6-In the garlic-oil skillet, add cooked noodles, chicken, zucchini, remaining lemon juice, lemon zest, herbs, and 1/2 the cheese. Also add 1/2 cup pasta water. Toss and serve immediatley, garnishing with extra cheese.
