Chicken Mango Guacamole Tostadas

Ingredients:

2 chicken breasts
1 cup salsa
1 cup chicken broth
2 avocados
sea salt
lettuce, shredded
tomatoes
cheese, shredded
mango, cubed
tortillas

Directions:

  1. Place chicken breast, salsa and chicken broth in crockpot. Cook on high for 3-5 hours or low for 6-8.
  2. Once chicken is tender and cooked, shred chicken and place back in crockpot to absorb the juices. (If there is too much liquid, drain some).
  3. Guacamole: In bowl, peel avocados. add a little sea salt and a touch of lime or lemon juice to keep the green color. Mash with fork or place in blender or food processor until desired consistency.
  4. Prepare other ingredients (shred, cube, etc.)
  5. When ready to serve, start with guacamole spread on tortilla. Top with chicken, chesse, lettuce, tomato, any other desired ingredients, then mango.

 

Note: you can add variations such as corn, black beans, etc.
