Chicken Mango Guacamole Tostadas

Ingredients:
2 chicken breasts
1 cup salsa
1 cup chicken broth
2 avocados
sea salt
lettuce, shredded
tomatoes
cheese, shredded
mango, cubed
tortillas
Directions:
- Place chicken breast, salsa and chicken broth in crockpot. Cook on high for 3-5 hours or low for 6-8.
- Once chicken is tender and cooked, shred chicken and place back in crockpot to absorb the juices. (If there is too much liquid, drain some).
- Guacamole: In bowl, peel avocados. add a little sea salt and a touch of lime or lemon juice to keep the green color. Mash with fork or place in blender or food processor until desired consistency.
- Prepare other ingredients (shred, cube, etc.)
- When ready to serve, start with guacamole spread on tortilla. Top with chicken, chesse, lettuce, tomato, any other desired ingredients, then mango.
Note: you can add variations such as corn, black beans, etc.
