Chili Verde Tacos

Ingredients:

3 T olive oil
½ C onion; chopped
2 cloves garlic; minced
2 LBS pork shoulder (or chicken)
2 – 14 oz cans Green Enchilada sauce
1 - 4 oz can diced jalapenos
1 – 14 oz can diced tomatoes
2 T lime juice
1 t coriander
1 t cumin

Directions:

Heat olive oil and add onion, garlic, and meat.  Cook until meat is browned on outside.  Place meat, onion, and garlic in slow cooker.  Cook on low for 8 hours.  Add remaining ingredients and cook for a few more hours.   (Alternatively, cook meat on high for 2-3 hours, Add remaining ingredients and cook on low for a few more hours)

Serve with black beans, rice,  and corn on tortillas with sour cream
