Mac and Cheese

Ingredients:

2 T butter
2 T flour
1 C chicken broth
1 1/2 C milk
2 C grated cheddar cheese
Salt and pepper, to taste
1 T Dijon mustard
1 LB whole-wheat pasta
1 Head of Cauliflower; cut into florets and steamed

Directions:

Boil salted water and add pasta.

Meanwhile, in sauce pot, melt butter over medium heat.  Add flour and cook for 1 minutes.  Whisk in chicken broth and milk.  Thicken sauce.  Stir in cheese, salt, pepper, and dijon mustard.

Toss with pasta and cauliflower.

 

*Another idea is to puree the cauliflower and add to cheese sauce -- if kids don't like the "different" shape/textured "pasta" in with the other noodles...
