Chicken Stir Fry

Ingredients:

2 Chicken breasts
2 T soy sauce
1 t ginger
1/2 t garlic powder

4 T oil
2 Carrots; sliced
1 onion, sliced
1 green pepper, sliced
1 Cup Snap peas

1/2 C chicken broth
3 T brown sugar
2 T cornstarch

Directions:

Cut chicken into 1/2" strips.  Place into bag and add soy sauce, ginger, and garlic powder.  Shake to coat and let sit for 15-30 minutes.

Heat oil on medium high and cook chicken.  Remove chicken.  Reserve oil.

Heat oil and add vegetables.  Cook until tender-crisp.  Add chicken.

Combine chicken broth, sugar, and cornstarch in a small bowl.  Pour into veggies and chicken.  Cook until sauce is bubbly.  

Serve over hot rice.
