Ingredients:

1/2 lb fettucine or spaghetti
4 Tablespoons olive oil
2 – Boneless, skinless chicken breasts, cubed into bite-sized pieces
1/2 lb asparagus; trimmed & cut into 1 inch pieces
1 small red or green pepper; cut into thin strips
1 1/2 cups carrots; shredded
2 cloves minced garlic
1 1/2 tsp Italian herb seasoning, crushed
1/2 cup grated parmesan cheese

Directions:

Cook pasta according to package directions.

Heat oil and cook chicken.  When cooked, remove and set aside, reserving oil.

Cook vegetables and herbs in the oil for 3-5 minutes, or until tender-crisp.  

Stir chicken and vegetables together.  Toss into pasta.  Top with parmesan cheese.
