Broccoli Potato Soup

Ingredients:

4 Tablespoons Butter
1 Onion; diced
1 Large head of broccoli
4-6 Red Potatoes
1/2 Cup Flour
1 (12 oz) can Evaporated Milk
1 Cup Milk
4 Cups Chicken broth
2 Cups Shredded Cheddar Cheese
4 oz Cream Cheese
½ teaspoon pepper
Salt, to taste
Bacon bits & Shredded cheese, to garnish
4 Cups Water

Directions:

1 – Melt butter in large pot. Add onions and cook until softened. 

2 – Add broccoli, potatoes, chicken broth, and water. Bring to a boil, then turn down to a simmer and cover with lid. Cook until vegetables are softened, about 10-15 minutes. 

3 – Whisk together flour and both milks in separate bowl until well mixed with no lumps.  Add to the pot and stir until thickened.

4—Add cheeses, salt, and pepper.  Stir until incorporated. 

5 – Serve garnished with bacon bits and cheese.
