Meat Loaf with Tomato Chutney

Ingredients:

Tomato Chutney:
½ T olive oil
1 medium onion; sliced
2 cloves garlic; minced
3 large tomatoes; chopped
½ C red pepper; chopped
¾ C ketchup
¼ C Worcestershire sauce
Pinch of red pepper flakes
Salt and pepper
Meat Loaf
1 T olive oil
1 medium onion; chopped
2 cloves garlic; minced
2 t Salt
1 t Pepper
½ t dried rosemary
3 LB ground turkey (or combo of beef/turkey)
1 C bread crumbs
2 eggs; beaten

Directions:

1.       Take both onions and chop.  Put all of olive oil (1 ½ T) in skillet and heat over medium-high.  Put all onions and all garlic in oil and cook until onion is translucent. 

2.       Remove half of mixture and set aside.

3.       Add tomatoes and peppers to mixture still in skillet.  Cook for a few minutes more, until tomatoes are soft and saucy.  Add ketchup, Worcestershire, and pepper flakes and simmer 10-15 minutes.  Season with salt and pepper.  This is the prepared chutney.

4.       Meanwhile, preheat oven to 350 degrees.

5.       In a bowl, beat eggs.  Add seasonings, meat, and bread crumbs.  Add reserved cooked garlic and onion.  Take one cup of prepared chutney and add that as well.  Stir gently to combine.

6.       Dump meat mixture onto foil-lined baking dish.  Loosely form into a log.  Cover with ½ of the remaining chutney. 

7.       Bake meat loaf for 60-90 minutes, until internal temperature is 160 degrees.

8.       Serve meatloaf with remaining chutney.
