Ingredients

  • 1 lb ground beef
  • 1 tsp minced garlic
  • 1 tsp chili powder (add more to taste)
  • 1 can (14 oz) kidney beans, drained
  • 1 can (14 oz) diced tomatoes with garlic and onion
  • 1 cup elbow macaroni, uncooked
  • ½ cup water
  • 1 cup shredded cheddar cheese
  • Optional: 1/2 cup diced onion

Preparation

  1. In large skillet, cook ground beef and onion until beef is no longer pink and onions are softened.
  2. Add minced garlic, chili powder, beans, tomatoes, macaroni and water.
  3. Bring to a boil. Cover and reduce heat to low. Simmer for 15-20 minutes, until macaroni is tender.
  4. Add cheese and cover for 2 minutes until melted. Serve immediately.
