Ingredients:
3 c. Peaches, sliced
2/3 c. Sugar; (less for canned fruit)
2 T. Flour
1/2 t. Cinnamon
1/3 c. Butter
1 c. Flour
2 T. Sugar
1 1/2 t. Baking Powder
1/2 t. Salt
1/3 c. Oil
3 T. Milk
1 Egg
Directions:
1. Preheat the oven to 350 degrees.
2. Mix peaches, first measure of sugar, first measure of flour, and cinnamon into a greased 8”x8” pan. Cut margarine into pieces and place randomly on top of mixture.
3. Mix the remaining ingredients in a separate bowl. Drop mixture onto fruit.
4. Bake for 25 minutes, or until topping is very light brown.
5. Turn off oven and let cobbler sit for another 30 minutes. This makes the top crispy.
6. Serve with vanilla ice cream or cool whip.
